Instructions

1. Halve the 2 spaghetti squash and season them with Extra Virgin Olive Oil (EVOO), salt, and pepper. Bake the seasoned spaghetti squash at 400F for 30 minutes.
2. Prepare the ricotta mixture by combining 1 package (~500g) of ricotta cheese, 1 cup of frozen spinach, 2 eggs, ½ cup of basil leaves, ½ tsp of salt, and ½ tsp of garlic powder.
3. Assemble the lasagna by layering the cooked spaghetti squash, 2 cups of marinara sauce, the ricotta mixture, sliced fresh mozzarella cheese, and grated mozzarella cheese.
4. Bake the assembled lasagna at 375F for 35-40 minutes. Place it on the middle rack to prevent the top cheese layer from burning. Enjoy!
