Creamy, cozy, and packed with around 10 g of protein each, these High-Protein Pumpkin Frozen Treats are simple to make, freezer-friendly, and satisfying when a sweet craving hits. Perfect as a healthy, protein-packed snack or dessert.
For the pumpkin bites: In a large bowl, mix together the 1 ½ cups pumpkin purée, 1 ½ cups plain Greek yogurt, ½ cup maple syrup, 1 cup peanut butter powder, and 1 Tbsp cinnamon until completely smooth. Use a cookie scooper to portion the mixture into 15 cookie-size bites and place them on a lined tray. Freeze for at least 4 hours, or until firm.
For the topping: Once the bites are frozen, melt about 1 cup total of white and butterscotch chocolate chips together (you can use a microwave or double boiler). Dip each frozen bite halfway or coat completely, as desired. Immediately sprinkle with a dash of cinnamon or some pumpkin seeds for an extra touch. Store the finished treats in your freezer and grab one whenever you need a delicious, protein-packed snack.
