These 2-ingredient breakfast cookies are sweet, soft, all natural, and high in protein. Made with ripe bananas and roasted sesame seeds, they are a simple and healthy way to start your day. Optional chocolate drizzle can be added for extra flavor.
Peel and mash the 3 super ripe bananas. In a bowl, mix the mashed bananas with 3 cups of roasted sesame seeds until well combined. Form the mixture into circular shapes and flatten the tops to create cookies. Bake in an oven preheated to 350°F (175°C) for 25-35 minutes, or until the bottom of the cookies are light brown. For an optional drizzle, melt ¼ cup chocolate chips with ½ tsp coconut oil and drizzle over the baked cookies. Serve with fresh fruit and Greek yogurt for a balanced breakfast.
